- 50g rolled oats
- 250ml water or unsweetened almond milk
- 1/2 avocado, sliced
- 2 tbsp pumpkin seeds (pepitas), toasted
- 1 large egg (poached or fried)
- 1 tsp olive oil
- Salt, black pepper, and chili flakes to taste
Method
- Cook the oats: combine oats and liquid in a saucepan with a pinch of salt. Bring to a simmer over medium heat, stirring occasionally for 5–7 minutes until creamy.
- Prep the topping: while the oats cook, fry or poach your egg to your liking.
- Assemble: pour the savoury oats into a bowl. Top with sliced avocado, the cooked egg, and toasted pumpkin seeds.
- Finish: drizzle with olive oil and sprinkle with black pepper and chili flakes.

- 1 can (120g) sardines in olive oil, drained (reserve 1 tbsp oil)
- 1 can (400g) chickpeas, rinsed and drained
- 2 large handfuls of baby spinach or kale
- 1 tbsp tahini
- Juice of 1/2 lemon
- 1 tbsp toasted sesame seeds
- Salt and cracked black pepper
Method
- Crisp the chickpeas: heat the reserved sardine oil in a pan over medium-high heat. Add chickpeas and a pinch of salt. Cook for 5 minutes until slightly crispy.
- Make the dressing: whisk the tahini, lemon juice, and 1–2 tbsp of warm water together in a small bowl until smooth and pourable.
- Build the base: toss the spinach or kale with the warm chickpeas in a serving bowl so the greens wilt slightly.
- Layer and serve: flake the sardines over the top. Drizzle with the tahini dressing and finish with a heavy sprinkle of sesame seeds.

- 100ml light coconut milk (chilled)

Method
- Cook noodles: boil soba noodles according to package instructions (usually 4–5 minutes). Drain and immediately rinse thoroughly under ice-cold water to stop cooking and remove starch.
- Mix the cooling broth: whisk together the chilled coconut milk, lime juice, and grated ginger in the bottom of your serving bowl.
- Assemble: toss the cold noodles, cubed tofu, and cucumber ribbons into the coconut-lime broth.
- Garnish: top generously with fresh mint and coriander right before eating.

- 1 salmon fillet (approx. 150g)
- 200g Swiss chard or spinach, roughly chopped
- 1 clove garlic, minced
- 1 tsp butter or ghee
- 1 tbsp pumpkin seeds
- Slice of lemon
Method
- Bake the fish: preheat oven to 200°C (180°C fan/Gas 6). Season salmon with salt, pepper, and a bit of garlic. Bake on a lined tray for 12–15 minutes until flaky.
- Sauté the greens: while the salmon bakes, melt butter in a skillet over medium heat. Add the remaining minced garlic and cook for 30 seconds. Toss in the chard and cook for 3–4 minutes until wilted.
- Plate it up: lay the bed of garlic greens on a plate, place the salmon on top, and scatter pumpkin seeds over the dish. Squeeze fresh lemon juice over everything.

- 1 head of broccoli, cut into small florets
- 2 tbsp tamari or soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
Method
- Sear the beef: heat sesame oil in a large frying pan or wok over high heat. Add beef strips and cook for 2–3 minutes until browned. Remove beef from the pan and set aside.
- Cook veggies: turn heat down to medium. Toss garlic, ginger, and broccoli florets into the same pan. Add 2 tablespoons of water to help steam the broccoli. Cook for 4 minutes until tender-crisp.
- Combine: return the beef to the pan. Pour over the tamari or soy sauce. Toss everything together for 1 final minute until piping hot.

- 500g chicken breast or thighs, cut into bite-sized pieces
- 1 red bell pepper, chopped
- 1 courgette (zucchini), sliced
- 1 red onion, wedged
- 100g feta cheese, crumbled
- 2 tbsp olive oil
- 2 tsp dried oregano
- Salt, pepper, and lemon wedges
Method
- Prep the oven: preheat your oven to 200°C (180°C fan/Gas 6).
- Toss and season: place chicken pieces, peppers, courgette, and red onion directly onto a large baking sheet. Drizzle with olive oil and season evenly with dried oregano, salt, and pepper. Toss to coat.
- Roast: spread everything out into a single layer. Bake for 20 minutes until the chicken is cooked through and veggies are slightly charred.
- Finish: scatter the crumbled feta cheese over the hot sheet pan and return to the oven for an additional 3–5 minutes until the cheese softens. Serve directly from the pan with lemon wedges.
